Vegan stuffed eggplant recipe
Ingredients
- 2 Eggplants.
- 2 Celery sticks.
- 1 red bell pepper.
- 1 onion.
- 2 cloves of garlic.
- 2 tbsp. of raw slivered almonds.
- 1 tbsp. of chopped parsley.
- 6 tbsp. of olive oil.
- Salt.
- Pepper.
- Parsley (a few leaves).
Instructions
- Remove the strings from the celery stalks and cut them into small cubes. Put them in a saucepan with salted water that covers them, cook them for 12 minutes over medium heat, and drain them.
- Preheat the oven to 350 ºF.
- Cut the eggplants in half and hollow out the inside with the tip of a knife, being careful not to damage the walls and chop the flesh.
- Season the inside of the hollowed-out eggplants with salt and pepper, drizzle them with two tablespoons of oil, place them face down on a baking tray, and roast them for 10 minutes at 350 ºF. Remove and set aside.
- Remove the stem and seeds from the bell pepper and cut them into small squares.
- Peel the garlic and chop it.
- Peel and chop the onion.
- Heat the rest of the oil in a casserole and sauté the garlic and onion for 5 minutes.
- Add the chopped eggplant flesh, the drained celery, and the bell pepper squares, reserving a few for decoration.
- Season with salt and pepper and sauté for 15 minutes over medium heat.
- Add the almonds and chopped parsley, mix well, and stuff the half eggplants with this mixture.
- Put the eggplants in the oven at 350 ºF between 15 and 18 minutes.
- Remove the eggplants from the oven, arrange them on plates, and decorate them with parsley leaves and bell pepper squares.
