Tacos and Mexico: almost a culinary synonym

Taco is a very popular food in Mexico. It’s a corn tortilla, which is rolled up to contain various kinds of meat, vegetables, and sauce. It can be found everywhere if you’re in this country and also in Mexican restaurants all over the world.

There are more than 50 types of tacos, and these are named according to the type of meat or the way they are prepared. Most popular tacos named by its ingredients are tacos de cochinilla, tacos de barbacoa, or tacos de pollo. Also, depending on the preparation technique, there are tacos placeros, tacos guisados, tacos ahogados, tacos dorados, among others.

Tacos Dorados are tacos made from fresh corn tortillas and are filled with shredded chicken, beef, pork, beans, or potato and cheese.

After filling and rolling, the tortilla is fried in oil and takes a golden, crispy, and firm consistency. After the tortillas are fried, they are usually topped with cream, grated cheese, chopped lettuce, and green or red sauce. They are one of the cheapest foods in Mexico, which makes them very popular, and they are also called flautas.

An authentic Mexican Tacos Dorados recipe

Ingredients 

  • 1 lb of clean shrimp.
  • 1 chopped onion.
  • 2 chopped garlic cloves.
  • 2 chopped serrano chilis.
  • 2 chopped tomatoes.
  • Oil.
  • 2 oz. of butter.
  • 1 pinch of garlic powder.
  • 1 tsp. of wheat flour.
  • 2 tbsp. of water.
  • Salt and pepper to taste.
  • 15 corn tortillas.
  • Wooden chopsticks.

To serve with

  • Curtido or salsa to taste.
  • Avocado slices.

Preparation

  1. Heat a drizzle of oil with a tablespoon of butter in a pot or skillet. Sauté the onion and chopped garlic cloves until lightly browned.
  2. Add the chopped tomato and serrano chilis. Season with a pinch of salt and add another tablespoon of butter. Cook for 5 minutes, stirring occasionally.
  3. While the vegetables are frying, chop the shrimp into small or medium pieces. Remember that the shrimp must be clean and shelled.
  4. Add a tablespoon of wheat flour and two tablespoons of water to the pot. Stir for 3 minutes while the flour cooks. The flour will add consistency to the stew, and it will be very easy to put it in the taco.
  5. Next, add the shrimp and the last tablespoon of butter. Taste for salt and adjust to taste. Let cook for another 3-4 minutes until the shrimp is golden brown. Remove from heat and set aside.
  6. To assemble your shrimp tacos dorados, heat the corn tortillas so that they bend without breaking. Then add a heaping tablespoon of stew and close the tortilla with the help of wooden chopsticks.
  7. Fry the tacos in enough oil for a few minutes until the tortilla is golden brown. Remove and let stand on a plate with absorbent paper to remove excess oil.
  8. Once ready, remove the wooden chopsticks and serve these delicious golden shrimp tacos. Serve with a squeeze of lime and a few slices of avocado.
