Maybe you are after a new plate of pasta. Maybe you’re tired of using the same tomato sauce with traditional spaghetti over and over again. If that’s your case, look no further, you’ve just found your go-to guide to this versatile and delicious pasta. You just need to get a packet of olivieri gnocchi and give these two recipes a go.

Everything about gnocchi

Gnocchi is traditionally made of potatoes and durum wheat, together with other ingredients, of course. However, gnocchi experts have created many other versions of this delightful pasta, and now you’ll find, for example, spinach gnocchi. Whatever the main ingredient is, gnocchi is a perfect option for almost any meal of the day.

Some consider it pasta, and that’s because it goes so well with any type of sauce, but it’s actually not pasta. Gnocchi is bite-sized dumplings, and that is where its versatility relies on.

This pasta is one of the simplest to cook: you just need a pot of boiling water and some salt. Now, if you’re not used to cooking gnocchi, the cooking time might be a bit tricky. Fresh gnocchi takes no longer than two or three minutes to cook. That’s right, two minutes!

On the other hand, frozen gnocchi might take longer, but never more than five minutes. Make sure you pour some olive oil into the boiling water to give it an Italian twist!

Best sauces for gnocchi

Tomato sauce and filetto sauce are a classic. This pasta, which is quite filling in itself, goes great with any creamy sauce. Pesto and herb sauces are also a very good match, especially if you have a rosé wine by the side. Try any cheese sauce at the risk of falling in love with it! Now that you’ve been warned, let’s get into two very different but equally yummy recipes.

Recipe 1: Mac and Cheese bacon gnocchi

Ingredients:

  • 1 packet of Olivieri Gnocchi (Cheddar Bacon type).
  • 2 tbsp of butter.
  • 3 cups of broccoli.
  • 2 cups of grated cheese.
  • ½ cup of sour cream.
  • Salt.
  • Pepper.
  • 2 green onions.
  • Bacon.

Preparation:

  1. Take a large skillet and place it over medium heat. Melt a tablespoon of butter and add the packet of gnocchi. Satué the gnocchi until they are golden and crispy. Do not overcook them, and once you’re done, remove from the skillet and set them aside.
  2. In the same skillet, melt another tablespoon of butter and add the previously chopped broccoli. Satué for a couple of minutes.
  3. In a separate bowl, prepare the sour cream. Season with salt and pepper, and add any seasoning you like. You can also use some mustard, but that is completely optional.
  4. Add that mix to the cooking broccoli and bring to a slight boil. Take the heat down to a simmer and add the cheese. Stir continuously so that it melts and blends, and then bring back the gnocchi.
  5. Top everything with some chopped green onions and chopped bacon.

 

Recipe 2: Vegan gnocchi bowl

Ingredients:

  • 1 packet of Olivieri gnocchi.
  • 2 tbsp of olive oil.
  • Salt.
  • Pepper.
  • 2 sweet potatoes.
  • Spinach.
  • Tomatoes.
  • 1 cup of chickpeas.
  • Red cabbage.
  • Hummus dressing.

Preparation:

  1. You’ll start by dicing up and roasting the sweet potatoes.
  2. Preheat a large skillet and pour a tablespoon of extra virgin olive oil into it. Over medium heat, add a packet of gnocchi and sauté for a couple of minutes, making sure they brown on both sides. If you like them that way, make them crispy.
  3. Once they are done, take them to a big bowl and add the previously cooked sweet potatoes, together with the chopped spinach, the rinsed chickpeas, and the washed and sliced red cabbage. Cube the tomatoes and add them here too.
  4. Now, for the hummus dressing, which you can make yourself, you’ll want to whisk hummus with some more olive oil, salt, and pepper together with a tablespoon of water. Add some lemon juice if you like it.
  5. Take the mix to the bowl of vegetables and gnocchi and season with some more salt if needed. Add any seasoning blend you like!
  6. Serve and enjoy!
